There are many ways to differentiate - by ability or by gender or by choice. For one part of this I gave a pretest and then sorted the students into Got It - the group that aced the pretest and didn't require any further instruction Review It - the group that did well, but needed a review of the information Learn It - the group that needed to learn it - had no foundational knowledge For other assignments, I just gave students choices - like the speech/presentations I also differentiate between gender - offering boys/girls assignments - but they are welcome to do the assignment of the other gender if it's a topic that interests them. I have saved all of the files in Adobe Reader because many of them were created in Microsoft Publisher - if there are any that you want for your own to modify for your classroom, just email me and I'll send the original file.
