Last year, many families provided a variety of goodies at the many events we hosted. Often people were asked for the recipes. So we decided the website would be a good place to share recipes. If you have a recipe you would like to share with other families at LCS, please email them to weraustins@verizon.net and I will post them for everyone to try!!! Fruit Salsa with Cinnamon Chips 1 cup finely chopped fresh strawberries 1 medium navel orange, peeled and finely chopped 3 medium kiwi, peeled and finely chopped 1 can (8oz) unsweetened crushed pineapple, drained 1 tablespoon lemon juice 1 ½ teaspoons sugar Cinnamon Chips 10 flour tortillas (8 inch) 1/4 cup butter, melted 1/3 cup sugar 1 teaspoon ground cinnamon In a small bowl, combine the first six ingredients. Cover; refrigerate until serving. For chips, brush tortillas with butter; cut each into eight wedges. Combine sugar and cinnamon; sprinkle over tortillas. Place on ungreased baking sheet. Bake at 350 for 5-10 minutes or just until crisp. Serve with fruit salsa. Yield: 2 ½ cups salsa, 80 chips. Broccoli Jennifer 1 10oz pkg of chopped, broccoli, thawed and drained 1 can cream of mushroom soup 1/2 cup mayonnaise (Hellman's not Miracle Whip) 1/2-1 cup shredded cheddar cheese 1 small onion, finely chopped (optional) 1 egg beaten 18 ritz crackers, finely chopped butter
Butter a 1 quart casserole dish. Combine broccoli, soup, mayonnaise, cheese, onion, and egg. Pour into your casserole dish. Sprinkle with ritz cracker, dot with butter.
Bake 350 for about 35 minutes ENJOY! Apple Pecan Cheesecake 1 ½ cups Honey Maid Graham Cracker Crumbs 1/4 cup butter, melted 1 ½ cups plus 2 Tbsp. packed brown sugar 4 pkgs (8oz.) Philadelphia Cream Cheese 1 tsp. Vanilla 1 cup sour cream 4 eggs 4 cups chopped peeled apples 3/4 cup chopped pecans 1 tsp. Cinnamon Heat oven to 325. Mix crumbs, butter, and 2 Tbsp. brown sugar; press into bottom of pan. Bake 10 min. Beat cream cheese, 1 cup brown sugar and vanilla with mixer until blended. Add sour cream; blend. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour over crust. Mix remaining ½ cup sugar, apples, pecans and cinnamon; spoon over batter. Bake 1hr. Cool. Refrigerate 4 hours. Makes 16 servings
